Abstract | U diplomskom radu analizirani su sastojci 27 uzoraka vina graševina pomoću uređaja Winescan u tvrtki Horvat Univerzal d.o.o. : gustoća vina, stvarni alkohol, ekstrakt, glicerol, reducirajući šećer, glukoza, fruktoza, ukupna kiselost, vinska kiselina, jabučna kiselina, limunska kiselina, mliječna kiselina, glukonska kiselina, hlapiva kiselost, pH vina, slobodni i ukupni SO2, pepeo, ukupni polifenoli i metanol. Analizirana vina razlikuju se po godinama proizvodnje, po zoni vinogradarske proizvodnje (B i C1), tipu proizvodnje (konvencionalna/ekološka), kao i kvalitativnoj kategoriji (kvalitetna/vrhunska). Iz rezultata analize uređajem Winescan vidljivo je da su svi uzorci vina graševina u skladu sa Zakonom o vinu Republike Hrvatske te je on vrlo prikladan za brzu i točnu analizu različitih uzoraka vina. Statistička obrada analiziranih sastojaka općim linearnim modelom (GLM) provedena je za ukupni uzorak, različite godine, različite zone vinogradarske proizvodnje, različite tipove proizvodnje i različite kategorije kvalitete te je ukazala da među većinom sastojaka vina graševina ne postoje značajne razlike (P<0,05), a razlike su utvrđene kod: stvarnog alkohola, glicerola, jabučne i mliječne kiseline, vinske kiseline i razine sumporovog dioksida. |
Abstract (english) | In the graduate thesis, the ingredients of 27 samples of Graševina wine were analysed using the Winescan device in the company Horvat Univerzal d.o.o.: wine density, real alcohol, extract, glycerol, reducing sugar, glucose, fructose, total acidity, tartaric acid, malic acid, citric acid, lactic acid, gluconic acid, volatile acidity, wine pH, free and total SO2, ash, total polyphenols and methanol. The analysed wines differ by years of production, by the zone of viticultural production (B and C1), the type of production (conventional/organic), as well as the qualitative category (quality/top). The results of the analysis with the Winescan device show that all samples of Graševina wine are in accordance with the Wine Act of the Republic of Croatia and it is very suitable for fast and accurate analysis of various wine samples. Statistical processing of the analysed ingredients by the general linear model (GLM) was performed for the total sample, different years, different wine production zones, different production types and different quality categories and showed that there are no significant differences among most Graševina wine ingredients (P<0.05), and differences were found in real alcohol, glycerol, malic and lactic acid, tartaric acid, and sulphur dioxide level. |
