Abstract Pileće meso sadrži visok udio bjelančevina, a mali udio masti i kolesterola, što ga čini pogodnim za svrstavanje u skupinu dijetalnih namirnica. U posljednje vrijeme velika pozornost pridaje se udjelu masti i masnih kiselina u pilećem mesu. Niski udio masti u mesu pokazao se iznimno bitnim čimbenikom za potrošače tijekom kupnje odnosno konzumiranja mesa. U prehrani ljudi najvažniju ulogu imaju polinezasićene masne kiseline (omega-3 i omega-6), a upravo njihov omjer može pridonijeti zdravlju ljudi odnosno umanjiti razvoj kardiovaskularnih bolesti. Zahvaljujući svojem nutritivnom sastavu sjemenke konoplje pokazuju veliki potencijal u ljudskoj prehrani i hranidbi domaćih obzirom da su one sirovina bogate bjelančevinama i sadrže povoljan omjer omega-3 i omega-6 masnih kiselina. Stoga je cilj ovoga rada bio utvrđivanje razlika između kemijskog sastava pilećeg mesa i sadržaja masnih kiselina u mesu, obzirom na obogaćivanje obroka za piliće dodatkom sjemenki konoplje te procjena utjecaja njihova dodatka na smanjenje omjera omega-6 i omega-3 masnih kiselina u pilećem mesu. Istraživanje je provedeno 2020. godine na uzorku od 60 pilića linijskog hibrida Ross 308 koji su bili podijeljeni u tri skupine, kontrolnu (K), skupinu s 5% udjela sjemenki konoplje u hrani (A) te skupinu s 10% udjela sjemenki konoplje u hrani (B). Tijekom cijelog tova praćeni su pokazatelji uspješnosti tova (tjelesna masa, prirasti, konverzija hrane), a nakon toga su pilići poslani na klanje te klaoničku obradu i vaganje. Nakon hlađenja, uzeti su uzorci bijelog i crvenog mesa na kojima je određen kemijski sastav i sadržaj masnih kiselina. Rezultati dobiveni statističkom obradom pokazuju da obogaćivanjem obroka za tovne piliće dodatkom sjemenki konoplje dolazi do pozitivnih promjena glede hranjivih sastojaka i sastava masnih kiselina u mesu pilića te dolazi do smanjenja omjera omega-6 naspram omega-3 masnih kiselina.
Abstract (english) Chicken meat contains a high proportion of proteins and a small proportion of fat and cholesterol, which makes it suitable for classification in the group of dietary foods. Recently, much attention has been paid to the proportion of fat and fatty acids in chicken meat. The low fat content in meat proved to be an extremely important factor for consumers when buying or consuming meat. Polyunsaturated fatty acids (omega-3 and omega-6) play the most important role in human nutrition, and it is precisely their ratio that can contribute to human health, or reduce the development of cardiovascular diseases. Thanks to their nutritional composition, hemp seeds show great potential in human nutrition and the nutrition of domestic animals, given that they are a raw material rich in proteins and contain a favorable ratio of omega-3 and omega-6 fatty acids. Therefore, the aim of this work was to determine the differences between the chemical composition of chicken meat and the content of fatty acids in the meat with regard to the enrichment of the ration for chickens with the addition of hemp seeds, and to assess the impact of their addition on the reduction of the ratio of omega-6 to omega-3 fatty acids in chicken meat. The research was conducted in 2020 on a sample of 60 chickens of the Ross 308 line hybrid, which were divided into three groups, control (K), a group with a 5% share of hemp seeds in the feed (A) and a group with a 10% share of hemp seeds in the feed (B). During the entire fattening, indicators of fattening success were monitored (body mass, gains, feed conversion), and after that the chickens were sent for slaughter, slaughterhouse processing and weighing. After cooling, samples of white and red meat were taken and the chemical composition and content of fatty acids were determined. After statistical processing, the obtained results show that by enriching the ration for broiler chickens with the addition of hemp seeds, there are positive changes in terms of nutrients and the composition of fatty acids in chicken meat, and there is a decrease in the ratio of omega-6 to omega-3 fatty acids.
